Hot Apples with Oat Topping

4 tart apples
2 Tbsp. cornstarch
1/4 cup maple syrup
2 tsp. lemon juice
1 tsp. ground cinnamon

1 c. quick-cooking rolled oats
2 Tbsp. maple syrup
2 tsp. oil
1 tsp. vanilla

To make the apples: Peel and core the apples, then cut into small chunks. Place in a 9" glass pie plate and toss with cinnamon. Stir well. Cover with vented plastic wrap and microwave on high for 6 minutes, or until the apples are tender. Let stand for 5 minutes.

To make the oat topping: Place the oats in another 9" glass pie plate. Drizzle with maple syrup, oil and vanilla. Mix well. Microwave on high for 1 minute. Stir well. Repeat 3 or 4 times, or until the oats are crisp and very lightly browned but not burned. Sprinkle over the apples. Makes 4 servings. This is an official 5 A Day recipe.
